FOR IMMEDIATE RELEASE Niagara-on-the-Lake, ON June 4, 2008 – Summer at Tiara in Queen’s Landing means abundant fresh produce, waterfront dining on the patio, and a scintillating new menu featuring the best that Niagara and Canada have to offer.
To complement this, Chef James Olberg is celebrating a silver medal win at the recent qualifying competition of Bocuse d’Or held in Montreal. Held biannually, the event challenges chefs nationwide to compete for the chance to represent Canada at the biannual Bocuse d’Or competition in Lyon, France. The Bocuse d’Or is one of the renowned international cooking competitions in the world founded in 1987 by legendary French Chef Paul Bocuse and Albert Romain.
Olberg earned silver with an entry of Black Cod and Lobster in addition to a Pork Loin and Pork Belly entry. The contest requires participating chefs to prepare two platters for 10 using specified ingredients within a 5-hour time limit. Chef returned to Tiara at Queen’s Landing to introduce his new summer menu.
Seafood in all its glory returns to the Tiara menu this summer with remarkable selections of the finest fish dishes. A favourite is Chef Olberg’s pan-seared sea bass fillet complemented by scampi and chard corn risotto, asparagus, dressed with preserve lemon and champagne foam. Other features include a roast Canada Atlantic salmon fillet with lobster and truffle potatoes, braised fennel and Perigueux sauce. A grilled 14 oz. veal t-bone with summer tomato and arugula salad, tempura onion rings and balsamic cipollini onion jus will satisfy meat eaters.
Niagara’s wholesome local produce is the focus of many of Tiara’s starters, such as the heirloom and organic tomato salad with Italian buffalo mozzarella, basil and sweet aged balsamic or the Niagara gazpacho and saffron soup with butter poached scampi and Tuscan crouton.
